As the new marquis restaurant for the Woodlark Hotel, Chef Doug Adams' wanted Bullard to pay homage to his hometown of Texas in downtown Portland. Bullard's focus on smoke and fire is inspired by classic Texas cooking. A wood-fired heath on display in the open kitchen and a wam palette bring the feeling of a southern barbeque to Portland.
